Pretzel chocolate chip cookies

I enjoy reading murder-mysteries.  One of my favorite authors is Joanne Fluke.  The main character in her books is Hannah Swenson.  Hannah has a knack for finding dead bodies which drives her mother absolutely batty.  With the help of her mother, sisters, and friends, she investigates murders.  Since Hannah owns a cookie shop, the author includes recipes for different types of baked goodies plus other food.  In the past, I've tried different cookie recipes.  Usually I am impressed with the end result.  One such recipe was for pretzel chocolate chip cookies.


Last month, our new church had a get together.  We were suppose to bring a different type of dish to share.  I decided to take a batch of these pretzel chocolate chip cookies.  Everyone's reaction to these cookies was a positive one.  Since the only other dessert was strawberry shortcake which also good, it was nice to have a cookies there also.


The boys enjoyed crush the pretzels into tiny bits.  I put a handful or two of pretzels into a zip lock bag, hand them a meat mallet, and a plastic cutting board and then let them pound away at the pretzels.  I'd rather have them pound out the pretzels rather then each other.



Without further ado, here is the recipe.



Ingredients:



  • 1 cup softened butter (2 sticks, 1/2 pound)

  • 2 cups granulated sugar (white)

  • 3 Tbsp. molasses

  • 2 tsp. vanilla

  • 1 tsp. baking soda

  • 2 beaten eggs (just whip them up in a glass with a fork - poke the yolks first)

  • 2 cups crushed salted thin stick pretzels (measure after crushing)

  • 2 and 1/2 cups all purpose flour

  • 1 and 1/2 cups semi-sweet chocolate chips


Directions:


Use an electric mixer if you have one because the dough gets really stiff.




  1. Preheat oven to 350 degrees.

  2. Mix the softened butter with the sugar and the molasses. Beat until the mixture is light and fluffy, and the molasses is completely mixed in.

  3. Add the vanilla and baking soda. Mix them in well.

  4. Break eggs into a glass and whip them up with a fork. Add them to your bowl and mix until they're thoroughly incorporated.

  5. Put your pretzels in a zip lock plastic bag. Seal it carefully and place it on a flat surface. Get out your rolling pin and run it over the bag, crushing the pretzels inside. Do this until there are no large pieces and the largest is a quarter-inch long.

  6. Measure out two cups of crushed pretzels and mix them into the dough in your bowl.

  7. Add one cup of flour and mix it in. Then add the second cup and mix thoroughly. Add the final half cup of flour and mix that in.

  8. Measure out a cup and a half of chocolate chips and add them to your cookie dough. If you're using an electric mixer, mix them in at the slowest speed. You can also pu the mixer away, and stir in the chips by hand.

  9. Drop by rounded teaspoons onto greased or sprayed with nonstick cooking spray cookie sheets. Place 12 cookies on each standard sheet.

  10. Bake at 350 degrees for 10 to 12 minutes or until nicely browned. (I do it for 11 minutes.)

A Year Ago Today

A year ago, yesterday I read online that a teenager had drowned.  They had not released the name at that time but my gut feeling told me that I knew the teenager.  So I went to my in-laws for dinner wondering who had drowned.  By the time I got home, they released the name of the teenager.  Not only did I know him, I had taught him for two years.  The last time I had seen him was a little over a year before.  He had come in with his mom to pick up his sister.  When I saw him in the office, I made it a point to say hi to him.  He gave me a hug. 

A year ago today, I prayed and kept looking at the online newspaper seeing if there was any updates.  I wanted the outcome to be good.  That night I went to bed not realizing that my prayers were not answered.  He had passed away.

When I awoke the next day, I checked the online newspaper to see if there was any updates.  The headline read "Man who jumped in pool to save friends has died."  My heart sank as the tears welled up in my eyes.  After I read the article, I heard a bang on my window.  I looked up and saw the color red.  I just knew it was a cardinal which is my good luck "charm."

For the next few days, I continued on with a broken heart not knowing when his memorial or funeral was going to be held.  I knew I needed to be there if not for his family and friends but for myself.  I needed to say goodbye and let him know that he was my hero because he died because he tried to save another person's life.

The next weekend was the 4th of July.  My mom had invited the boys and I on a mini vacation to West Virginia.  I went not knowing when his memorial or funeral was.  We kept calling home to see if anyone could find out any information.  No one could.  That weekend was what I needed.  I needed to get away.  I got home on the 6th of July and found they had posted the obituary with the date and time of his funeral.  It was going to be the next day.  My hubby would watch the boys while I went to the funeral.

I went to the funeral.  There are several memories that stick in my mind.  The first was that as his mom gave me a hug, she asked me "how I was doing?"  I had not been her son's teacher for six years but she cared enough to ask how I was doing.  The other memory that sticks in my mind is when the young man whose life he helped saved declared "He did it for me.  He did it for me."

The next few days were a blur because I was physically ill and mentally drained.

During this past school year, I've shared memories of him with co-workers and attended what would have been his graduation.

Today is the anniversary of his death.  Renier, have I told you lately, that you are my hero.

Homemade pizza

For the longest time, the Imaginative One would not even touch a piece of pizza. A few weeks ago, he decided he needed to see if his taste buds had changed. He discovered that he does like cheese pizza so that makes meal planning easier because I know he will eat it if I make it. In the past, he would eat something different if we had pizza.



The sauce:



Ingredients:




  • a small can of tomato paste

  • 1 Tbsp. of extra virgin olive oil (otherwise known as EVOO - Yes, I'm a Rachael Ray fan.)

  • 1/4 to 1/2 cup of water

  • 1 Tbsp. of sugar

  • salt to taste

  • Italian Seasoning (or 21 Seasoning Salute from Trader Joe's) again to taste

  • garlic powder again to taste


Steps:





  1. Open up can of tomato paste and put it a small bowl.


  2. Put the EVOO, sugar, and seasonings into the bowl. Pour water into the bowl.


  3. Stir up the tomato paste, EVOO, seasonings, sugar, and water.


That's it. It's very easy to make. You can put more or less water in it depending on how thin you like your sauce to be. You put how much seasonings you would like in it depending on your taste buds.



Quick Pizza Crust:
(I got the recipe from Mommy's Kitchen. When I made this on Saturday, I wanted a simple pizza crust for our pizza. This recipe fit the bill. It was easy to make and was tasty. The only change I would make is adding some Italian seasoning to the crust so that it would have a little more flavor. Other then that, I wouldn't change a thing.)







  • 1 - 1/4 oz packet of yeast (2 1/4 tsp. of yeast)


  • 1 cup warm water


  • 1 tsp sugar


  • 1 tsp salt


  • 2 Tbsp. oil (vegtable or olive) - I used EVOO.


  • 2 1/2 cups all purpose flour




  • 2 tablespoons cornmeal - optional for sprinkling on cookie sheet (We used a little more than that because the Wee One was having fun putting it on the cookie sheet.)



Steps:




  1. Dissolve yeast in warm water and add sugar. Let yeast sit about 10 minutes (you want it good and foamy).

  2. Stir in remaining ingredients until blended. Beat vigorously 20 strokes. I removed the dough from the bowl and kneaded it until it was no longer sticky.

  3. Place the dough in a greased bowl, turning dough to coat all sides and then allow the dough to rest for at least five minutes.

  4. Preheat oven to 425, spread dough onto a lightly greased baking sheet sprinkled with corn meal (optional).

  5. Top with desired toppings and bake for 20 minutes This makes 1 - 14 inch pizza.


My hubby who works in the pizza business and has for the past twenty years said the pizza was pretty good. That is a compliment coming from him. Both of the boys liked it. We'll use this pizza crust recipe again.

Menu planning week of June 28

We don’t have as much going during this week.  There are few days that we don’t have anything planned so that will be nice.  We will just relax on those days.

Instead of assigning certain days to the meals, I’ve decided just to list them.  If I don’t get around to making a certain meal, I will carry it over to the next week.

 Breakfasts:

cereal, mini pancakes, Snickerdoodle muffins, graham muffins

 Lunches:

sandwiches (ham or peanut butter), left-overs

 Dinners:

*Cheeseburger macaroni

50’s Prime Time meatloaf with mashed potatoes

Hashbrown casserole with ham and sausage

Almost famous chicken sandwiches with waffle fries (Food Network Magazine – July/August 2010) - The sandwiches will be served on homemade hamburger buns.

**Crockpot Cantonese sweet and sour chicken served over rice

**Italian beef sandwiches on homemade hamburger buns with potato chips

(All of the meals will be served with green beans, mixed veggies, corn or peas.  We might even have salad with the meals.)

 *Carry-over from last week

**One of these will be served on Saturday.  My sister is coming to visit and told me that she would like one of those meals.

A lot of these recipes are from a blog I found last week called Eat at Home.  Tiffany has a lot of great recipes.  She also creates menus with grocery lists for an entire week.

S’Mores Snack Mix

I saw this recipe on another new blog (at least to me) called Mommy's Kitchen.  Since it was both looked easy to make and yummy, I knew I needed to try it.  

Today we were going out to a local outdoor mall to play in the water fountain.  I decided to pack our lunch and knew that the S'Mores snack mix would be a perfect complement to our lunch.  When I had the Imaginative One try the snack mix, he wanted to eat only the marshmallows and chocolate chips and not try the Golden Grahams cereal.  I then showed him that you could make a minature S'Mores using two Golden Grahams, a marshmallow, and a chocolate chip.  He tried it and loved it.  The imaginative one figured out the recipe on his own.  He was so proud of himself.

Later that evening, we went to see fireworks at an event called Tattoo.  Tattoo is sponsored by the Air Force and is free to the public.  They have a concert and planes that do tricks.  The evening ends with fireworks.  My father-in-law decided to take my niece, nephew, and two sons to see the fireworks.  We sat across the street from where the Air Force Museum.  Since we were going to have sit and wait, I decided to make some of the snack mix to bring along.  My mother-in-law and niece both agreed that it was yummy!

Smore's Snack Mix

Ingredients:

  • 15 oz box of Golden Grahams

  • 16 oz bag of mini marshmallows

  • 12 oz bag of chocolate chips


Directions:

  1. In a large bowl, mix up the ingredients.

  2. Enjoy!


It's that simple!  This is a real winner.

Snickerdoodle muffins

At Christmas time, I love making Snickerdoodles especially with green and red baking sugar instead of regular grandulated sugar.  So when I saw a recipe for Snickerdoodle muffins on a new blog (at least for me), I knew that I needed to make them.  Today provided a great opportunity to make them.  I was going to pick up the Imaginative One from VBS and then going to visit Mary Jane before heading to the library.  We eat our lunch at her house while visiting.  I decided I needed to treat Mary Jane to a homemade treat. 

The Imaginative One, Mary Jane, and myself all agree that these muffins are keepers.

Without futher ado, I present you the recipe for Snickerdoodle muffins. 

Snickerdoodle muffins

from Eat at home cook

 

Stars of the recipe:

  • 2 cups of all purpose flour
  • 1/2 tsp. of salt
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1 stick of butter softened
  • 3/4 cup of sugar
  • 2 eggs
  • 1 cup of milk
  • 1 & 1/2 tsp. of vanilla
  • 1 Tbsp. of sugar and 1 tsp. of cinnamon (Or if you were me, you would use even more cinnamon.)

Steps:

  1. In a large bowl, mix the flour, salt, cream of tartar, and baking soda.  Put aside.
  2. Using either your mixer or your hand held mixer, cream the butter and sugar. 
  3. Add the eggs (I usually break the eggs in a bowl and add them one at a time.). 
  4. Add the milk and vanilla.  Mix until it is well combined.
  5. Stir in the dry ingredients until well moistened.  (I put a little bit of the dry ingredients at a time.)
  6. Fill muffin cups 2/3rds of the way full of batter.
  7. Sprinkle the muffins with cinnamon sugar.
  8. Bake at 400 degrees for 15 to 20 minutes or until the toothpick comes out clean.
  9. Enjoy!!!

You are going to want to make these.

Is it my birthday?

Ever since January, the Wee One has asked me if it was his birthday yet?  I would tell him no and then would tell him how many more months until his birthday.  When June came, he would ask everyday instead of just every once in a while.  We would talk about how many more days were left. 

On Father's Day, we went to my mother's so we could celebrate with her.  We decided to eat at a local park but since there was a heat advisory we ate in the shelter.  The boys fed the ducks in the pond after they finished lunch.  The Wee One got to open up his birthday gifts.  (So did the Imaginative One because his birthday is coming up.)

Later in that evening, we went over to my in-laws for our weekly Sunday meal.  After dinner, we celebrated his birthday with cupcakes and ice cream treats.  One of his church buddies came over to help him celebrate his birthday.

On the Wee One's actual birthday, we went to a free movie at the local movie theater.  We saw The Pirates Who Don't Do Anything.  Afterwards we got the tickets for Toy Story 3 and then ate at Red Robin.  After we ate Red Robin, the Wee One and I met up with the Imaginative One and daddy to see Toy Story 3, a very good movie.  The Wee One went for a swim when we got home.  Later in the evening, we went to a play date with my MOP's group.  Of course, the Wee One found a mud puddle and proceeded to fall in.  So we had to go home.  All in all, I think he had a delightful fifth birthday.

Easy Peasy BBQ chicken

This really isn't a recipe.  Instead it's a method.  I take chicken pieces - legs, breasts, thighs, or wings - and place them in the crockpot.  Then I take a bottle of bbq sauce and pour it over the chicken.  Then I cook the chicken all day on low (6 to 8 hours).  The chicken falls off the bone and is delicious.

You can be fancy and put up onion in the crockpot with the chicken.  To be even fancier, you could cook up the onion first and then put it in the oven.

Told you this really wasn't a recipe but more of a method.

It's that time of the week again - menu planning for the week.  The imaginative one has Vacation Bible School in the morning all week so I need to make sure he has breakfast ready to go for him so he can eat on the way there if necessary because he doesn't move very fast in the morning.

Monday -

Dinner - bbq chicken wings pasta roni, veggies

Tuesday - The Wee One's 5th birthday!

I wish you would dance

Last night, the boys gave the performance of their life time.  They now think they are famous and that their dance video will be in the library.

My mother-in-law offered to pay and take the imaginative one to dance class so last year he took ballet.  This past year he decided to take tap dance.  She then offered to take the wee one to dance class also.  In late November, he started taking a tumbling class.  They practice and practice until it is time for their big show which occurred last night. 

During the actual recital you are prohibited from taking any pictures or video of the performance.  However, you are free to take as many pictures and videos as you want during the rehearsal.  Here are some pictures from the rehearsal.

The Wee One’s birthday

The wee one is excited about turning the big 5.  He's been talking about it since January.  We keep having to tell him that it is so many months away.  Now that it is June, he keeps asking me every day is it my birthday?!?  I have to tell him no, you have so and so days left.  He's now on the final countdown because he only has  2 more days left until he's a whole handful (like he already isn't one).  Although when you ask him how many days he has left, he will tell you that he has 2 weeks. 

We are celebrating his birthday tonight.  He is excited but I think it is because he is going to get gifts.  We try to tell him that the gifts are for other people but he doesn't believe us.  The imaginative one got him a gift last weekend.  It's a book about reptiles which is right up the wee one's alley.  Today we were given Toy Story paper from my mom today so the imaginative one had to use it to wrap his brother's gift.  He put a lot of tape on it.  That is until I told him that he had enough on the gift.  Then the imaginative one had to pick out a card from my stash.  He wrote a nice note to his brother on the card.  Then he had to tape the card to the gift.  Again he had to use lots of tape.  The funniest thing was he put his brother's first and last name on the envelope.  It's nice that he cares so much for his brother.

I can't believe my 6 pound 8 ounce baby boy is now a 32 pound 5 year old boy who speaks his mind.

I will get pictures of the Wee One when I find the baby pictures on my hard drive.

Sausage-sauerkraut skillet dinner

One of my favorite blogs is Cooking during stolen moments. Kate, the author, often has good recipes that my family enjoys eating. One of those recipes is Sausage-Sauekraut skillet dinner. I saw the recipe when she posted it in May and decided I needed to put it on my menu plan.

To be honest, I'm the only one who enjoys eating sauerkraut.  Hubby does eat it; however, it's not his favorite.  When I made it on Monday, the boys humored me and tried the sauerkraut.  They both decided they were not fans of it.  They both loved the sausage.  I could have saved the time and effort and just cooked up the sausage.  Hubby did enjoy it and I loved it.  But I love sauerkraut so the likely hood of me liking it was great.

Things I did differently:
I used turkey sausage.  There is no difference in taste.
Instead of canned sauerkraut, I used refridgerated sauerkraut.  I also rinsed off the sauerkraut before putting it in the skillet.
I also used three potatoes.

Reading to Therapy Dogs



My wee one and imaginative one are taking part in the summer reading program at our local library.  The library has a lot of cool activities for them to participate in.  One of them is reading to the therapy dogs.  The imaginative one loves to read to them.  He doesn't chose easy books to read.  Instead he picks harder books or chapter books to read to the dogs.

He fell in love with this golden retriever, Lacy.  When she was at the library, he ended up reading/spending an hour with her.  He read How I Became a Pirate and then listened to other children read to her.  Her handler ended up taking pictures of the imaginative one reading to her.
